Peaches and Cream Frozen Yogurt

The few times I have made this differ as far as the peaches I used. For example, the first time when I wrote the recipe, the peaches were huge! Very very large! I would say about 2 to 3 regular sized peaches would yield the same amount of fruit as the large peaches I used. Therefore, the next time I made it, I used 5-6 regular sized peaches. However, since the peaches aren't detrimental, calorie wise, to this recipe, you can use what you like. I have even made this recipe with other fruit, such as cherries, mangos, pineapple, or strawberries. When substituting fruit, simply chop the fruit as you would like to see it within the frozen yogurt, and follow the procedures indicated in the recipe. The lime juice and sugar will add flavor and punch and draw out the juice for exceptional flavor to the yogurt. Also, draining the yogurt allows for the extra juice drawn out of the fruit by the sugar and lime juice. Sprinkle peaches with 2 tablespoons of sugar and lime juice and allow to sit at room temperature for an hour.

Add vanilla seeds to cream and whip to soft peaks with 2 tablespoons sugar.

Whip half drained yogurt with half the cream to lighten. Mix remaining yogurt with remaining cream being careful not to lose too much air from the cream. The second batch of frozen yogurt, I whipped the yogurt in with the cream in the mixer and it worked very well.

Add agave nectar to mixer and continue to whip until nectar is mixed in.

Mix fruit with cream and yogurt mixture and freeze according to the manufacturers directions of your ice cream maker. Freeze and enjoy!
